Ingredients

  • 2 Cups Berries
  • 3/4 Cup Coconut Sugar
  • 1 Tbsp Lemon Juice

Instructions

1. Put a couple of spoons in the freezer at the beginning of the cooking process, to check the thickness of the jam once it's ready.

2. In a saucepan, combine the berries, sugar, and lemon juice.
2 Cups Berries
3/4 Cup Coconut Sugar
1 Tbsp Lemon Juice

3. Bring to a boil over medium heat, stirring constantly.

4. Reduce heat to low and simmer for 20 minutes, stirring constantly.

5. The gel point for jam is 105°C/221°F. You can also test if the jam has reached its gel point by spooning some hot jam onto a chilled cold spoon. If the jam doesn't easily slide around, it's ready. The jam will continue to thicken as it cools.

6. Pour into a clean jar/container and let cool completely.

Tips:

  • Store in the refrigerator for up to 2 weeks or in the freezer for up to 6 months.
  • Add 1/2 Tbsp pectin with the rest of the ingredients for a thicker consistency.
  • Another way to thicken the jam is to add a mixture of 1 Tbsp of cornstarch and 2 Tbsp of water while simmering.
  • Coconut sugar can be substituted with other types of sugar such as granulated sugar, cane sugar, jam sugar, etc.
  • To make a smoother jam, mash and/or strain the berries before cooking.
